Lentil Sweet Potato Curry

Serves 6

Cook time: 35 minutes


1 cup dried lentils, rinsed

3 cups bone broth (with sea salt), divided

2 tbsp olive oil

1 large onion, chopped

2 medium carrots, chopped

3 garlic cloves, minced

2 medium sweet potatoes, peeled and chopped

3 tsp curry powder

¾ tsp kosher salt

½ tsp pepper

2 medium tomatoes, chopped

1 medium apple, peeled and chopped

1 tbsp coconut sugar or brown sugar

½ cup coconut milk


  1. In a small saucepan, bring 2 cups bone broth to a boil; add lentils and reduce to simmer. Cook until broth is absorbed and lentils are soft; about 20-25 minutes.
  2. In a large skillet over medium heat, add oil and onion. Cook for 5 minutes; add carrots, garlic, sweet potatoes, curry, salt, pepper and one cup broth. Bring to a boil; reduce heat, cover and simmer. Cook until vegetables are tender.
  3. Add the tomatoes, apple, sugar and coconut milk and simmer for 10 more minutes.  Add lentils to the pan and mix.
