¾ cup liquid egg whites
1 large mushroom, sliced
5 grape tomatoes, halved
2 tbsp crumbled goat cheese
sea salt and pepper, to taste
- Heat a small 6-inch skillet on medium heat. Spread oil in the pan and then add egg whites. When eggs begin to set, add the remaining ingredients on top.
- Place in the oven on broil until eggs are fully cooked, one or two minutes.
