Flax, Carrot, Apple Breakfast Muffins
Start your day off right with these hearty, delicious and healthy breakfast muffins. They contain flaxseed meal which is one of the best sources of Omega-3’s, carrots which are high in Vitamin A and walnuts which are a fantastic anti-inflammatory and also high in Omega-3’s. Bake at 350 degrees for 15-20 minutes. Makes 12 large or 24 small muffins.
3/4 c. organic oats
3/4 c. almond or rice milk
Mix oats and milk and let sit for 20 minutes. In another bowl begin combining the following dry ingredients:
1 1/2 c. whole wheat flour
3/4 c. flaxseed meal
3/4 c. coconut sugar (a low-glycemic sweetener)
2 t. baking soda
1 t. baking powder
1/2 t. salt
2 t. cinnamon
1/2 t. cardamom (optional)
Then stir in:
1 1/2 c. finely shredded carrots
2 shredded apples
1/2 c. dried cranberries, blueberries or cherries
1/2 c. chopped walnuts
Combine with oats and milk after beating together:
2 beaten eggs OR for vegan alternative egg replacer for 2 eggs
1 t. vanilla
Store these healthy breakfast muffins in the refrigerator or freeze some for later. Enjoy!
